Italian Almond Crumb Cookie

A close friend of my moms brought over a delicious dessert a few months back that I haven’t been able to get my mind off of. I did a little research and found this recipe that seemed pretty accurate to what she had baked. It was surprisingly very simple to follow and the results were exactly what I had hoped for (and remembered). It has the perfect soft and crunchy consistency, it’s extremely light and great for a nice Summer evening treat (or for breakfast the following morning).
