Lemon Ricotta Cookies

I’ve never been too fond of cheese but when it comes to cooking Ricotta is at the top of my list because it’s known for making almost any dish feel light and fluffy. This cookie recipe is one of my favorites for the fact that there is the perfect balance of tanginess and sweetness, especially since lemon treats have never done it for me.  After making them a few times I’ve decided I enjoy them more without the lemon glaze but with jam on the side.
