Strawberry Cupcakes

I was so excited to find juicy red strawberries at the market the other day, and since they were having a ‘buy one get one free’ deal I ended up with two baskets. To me, strawberries represent the summer time and since the weather has been pretty gloomy, I thought baking some strawberry cupcakes (with this recipe) would be just the ticket to getting my mind set back on the upcoming warm weather. I’m not a big frosting person so I decided to cut the frosting recipe in half (which wasn’t smart), and ended up with a fluffy over beat-ed mush. It tasted fine but honestly the appearance was unappetizing; at least the cupcakes came out perfectly moist and delicious, leaving me with a small taste of what Summer will bring.
