Vegetable Soup With Meatballs

The weather went from beautiful and sunny to rainy and gloomy within days, which caused the usual scenario of me being unmotivated to do anything, even necessary daily tasks. When it’s stormy outside typically I stay snuggled on the couch for hours doing nothing of importance. During these miserable days nothing seems more comforting than a big bowl of soup. I decided to make vegetable soup with meatballs using this recipe which was surprisingly easy. It was loaded with vegetables, flavor and very little calories which is always a plus. It was exactly what I needed to give myself a little extra push to get myself back on track.
